Ingredients:
For Spice Blend:
â ½ tsp. paprika
â ½ tsp. ground ginger
â ½ tsp. ground cumin
â ½ tsp. ground coriander
â ¼ tsp. ground turmeric
â ¼ tsp. ground cinnamon
â ¼ tsp. ground allspice
â ¼ tsp. kosher salt
For Chicken:
â 1 tbsp. olive oil
â 1 small red onion, sliced
â 2 garlic cloves, chopped
â ½ C. low-sodium chicken broth
â ¾ C. green olives, pitted
â ½ of lemon, seeded and sliced thinly
â 1½ lb. boneless, skinless chicken thighs
â 2 tbsp. fresh parsley, chopped
Instructions:
1) For spice blend: in a small bowl, mix together all ingredients. Set aside.
2) Add the oil in Instant Pot and select âSautéâ. Then add the onion and garlic and cook for about 5 minutes.
3) Stir in the spice blend and cook for about 1 minute.
4) Add the broth and scrape up the browned bits from bottom.
5) Press âCancelâ and stir in the olives, raisins, lemon slices, and chicken thighs.
6) Secure the lid and turn to âSealâ position.
7) Select âPoultryâ and just use the default time of 15 minutes.
8) Press âCancelâ and carefully do a âQuickâ release.
9) Remove the lid and serve hot.
